Apart from traditional dishes such as shopska salad, banitza, tarator and sarmi, you can also sample refined cuisine and carefully selected wines in one of the numerous gourmet restaurants. Bulgaria has a great variety of terrains and microclimates which produce wines with a distinctive character. The winemaking goes back to Thracian times - the wines of Thrace are mentioned by Homer both in the Iliad and the Odyssey. Nowadays, Bulgarian winemakers combine traditional expertise with new technologies to produce wines of consistent quality. The indigenous grapes are Dimiat, Misket, Pamid, Gamza, Mavrud and Melnik, which you can sample only in Bulgaria.
